pineapple au gratin

1 20 oz. can pineapple chunks, drained
1/2 cup reserved pineapple juice
1/2 cup self-rising flour
1/2 cup sugar
1 cup cheddar cheese
Mix flour, sugar, and pineapple juice. Add pineapple chunks and cheddar cheese and pour into a 9x9 casserole dish. Cover and bake in 350 oven for 20 minutes.
1/2 stick of butter, melted
1 tube Ritz crackers
1/4 cup brown sugar
Mix butter, crackers, and sugar. Remove casserole from oven and spread mixture over the top. Return to oven and cook uncovered for 15 minutes, or until a knife inserted near the center comes out clean.
